1. Rolled Oats: Rather than using commercial wheat flour, we’ll turn these rolled oats into oat flour at home with the help of a blender or a food processor. If you’d rather skip this step or don’t have a reliable device to help you, store-bought oat flour works just as well. Amazon has actually a surprisingly good selection here.

But also, I’ve become a bit of a fan of One Degree’s gluten-free sprouted rolled oats, like the one below, especially when I’m baking. They are easy on my stomach, probably because they are sprouted and gluten-free, and they seem to pack more nutrients.

So grab your apron, pull your hair back, and let me walk you through the step-by-step of the easiest bread you’ll ever make.

1. Grind the Oats

Grab three cups of rolled oats and pour them into the container of your preferred blending equipment—it could be a regular blender or a food processor—then grind them until they become flour-like.

While you may be tempted to keep some big oat chunks, make sure the flour is as fine as possible, with small particles. The finer the oat flour, the smoother the bread and the less likely it is to crumble.

2. Combine Oat Flour with Baking Powder

Grab a standard 8×4 inch loaf pan, line it with parchment paper, and then pour the dough into it. The mixture is thick and hard to maneuver, so use a spatula to distribute it evenly across the pan and prevent empty spots and air pockets.
