How to Make the Best Crispy Air Fryer Potato Wedges
If you want to make crispy air fryer potato wedges that are golden on the outside and soft on the inside, this recipe is all you need. It’s super easy, and once you try it, you won’t have to guess how long to cook potato wedges in the air fryer ever again!

Step 1: Prep your Potatoes
Use russet potatoes for the crispiest texture with a soft, fluffy inside. Yukon Gold works too if needed. Keep the skin on for extra crunch—just wash and scrub them well, then cut them into wedges.
Step 2: Soak for Extra Crispiness
Soak your potato wedges in a bowl of cold water with ice cubes for 10 minutes. This removes excess starch, making them super crispy. Trust me, this step is worth it!

Step 3: Dry Thoroughly
Drain the potatoes and spread them out on a paper towel. Use another paper towel to pat them completely dry—any moisture left will stop them from crisping up.
Step 4: Season to Perfection
In a small bowl, mix smoked paprika, garlic powder, black pepper, and salt. Then, in a large dry bowl, toss the potato wedges with olive oil and sprinkle the seasoning mix over them. Mix well to coat each wedge evenly.

Top Tip: Mix your seasoning with garlic-infused olive oil and let the wedges marinate for 10 minutes before cooking.
Step 5: Air Fry to Crispy Perfection
- Preheat your air fryer to 325°F (163°C).
- Arrange the potato wedges in a single layer in the air fryer basket. If your air fryer is small, cook in batches for the best results.
- Cook for 12 minutes, then flip each wedge.
- Increase the air fryer temperature to 400°F (204°C) and air fry for another 12 minutes until the wedges are golden and crispy.

Step 6: Enjoy!
That’s it! Your perfectly crispy air fryer potato wedges are ready to enjoy. They have the best crunch on the outside while staying soft and fluffy inside. Pair them with your favorite dipping sauce, and you’re good to go!

Top Tip: A squeeze of lemon or a sprinkle of fresh herbs or cheese right after cooking adds an exciting burst of flavor.
