How to Make the Best Crispy Air Fryer Potato Wedges

Crispy potato wedges made in air fryer with ketchup

Step 1: Prep your Potatoes

Use russet potatoes for the crispiest texture with a soft, fluffy inside. Yukon Gold works too if needed. Keep the skin on for extra crunch—just wash and scrub them well, then cut them into wedges.

Step 2: Soak for Extra Crispiness

Soak your potato wedges in a bowl of cold water with ice cubes for 10 minutes. This removes excess starch, making them super crispy. Trust me, this step is worth it!

Step 3: Dry Thoroughly

Drain the potatoes and spread them out on a paper towel. Use another paper towel to pat them completely dry—any moisture left will stop them from crisping up.

Step 4: Season to Perfection

In a small bowl, mix smoked paprika, garlic powder, black pepper, and salt. Then, in a large dry bowl, toss the potato wedges with olive oil and sprinkle the seasoning mix over them. Mix well to coat each wedge evenly.

Top Tip: Mix your seasoning with garlic-infused olive oil and let the wedges marinate for 10 minutes before cooking.

Step 5: Air Fry to Crispy Perfection

  • Preheat your air fryer to 325°F (163°C).
  • Arrange the potato wedges in a single layer in the air fryer basket. If your air fryer is small, cook in batches for the best results.
  • Cook for 12 minutes, then flip each wedge.
  • Increase the air fryer temperature to 400°F (204°C) and air fry for another 12 minutes until the wedges are golden and crispy.

Notes

  • Prep Ahead: Cut your potatoes in advance and soak them in cold water overnight. This removes excess starch and makes for extra crispy air fryer potato wedges the next day.
  • Even Crispier Wedges: For the crispiest results, pat the potato wedges completely dry before seasoning. Moisture is the enemy of crunch!
  • Perfect Cooking Temperature: Start at 325°F to cook the inside, then increase to 400°F for that golden, crispy finish. Adjusting the air fryer potato wedges temperature ensures the best texture.
  • Get Creative with Seasoning: Try adding Parmesan cheese, cayenne pepper, or fresh herbs after cooking for an extra kick.
  • Don’t Overcrowd the Basket: Air needs to circulate freely—cook in batches if needed.

  1. So, so good! My husband says it’s a new go-to for potatoes.
Thank you for sharing!! I’ll be watching for more recipes!

I used what i had on hand after a bit of a breakdown, so a lot of baking… haha..
So instead: vegetable oil and a lot more spices, including my homemade onion powder and 4 cloves of fresh garlic (rested for 15 minutes after smash and chop) to the oil.
They turned out so crispy, flavorful, and just great.

10/10 – will use this recipe again.

I actually love that you made it work with what you had on hand – especially after having a rough day. Cooking can be such good therapy, can not it? Your adaptations sound absolutely delicious! Vegetable oil works perfectly fine, and oh my goodness – homemade onion powder AND fresh garlic that you let rest after chopping? You definitely know what you are doing in the kitchen! That garlic rest time is such a smart move to develop those flavors.

Thank you so much for trying the recipe and for sharing your own creative spin. I am thrilled they turned out crispy and flavorful for you! Nothing beats that perfect air fryer crunch, right?
