This air fryer tortilla pizza for breakfast is one of my favorite ways to cook eggs when I want something a little more exciting than regular fried or scrambled eggs. It is cheesy, filling, loaded with tasty toppings, and honestly… it kind of looks like pizza, but I think it is even better!

Why you’ll love this air fryer breakfast

This is such a fun way to turn a few simple breakfast ingredients into something that actually feels like a full meal.

You get eggs, melted cheese, meat, onion, and olives all sitting on a tortilla underneath, so every slice has a little bit of everything.

It is also really easy to change depending on what you already have in the fridge. Different meat, different cheese, fewer toppings, more toppings… you can really make it your own. And yes, it looks suspiciously like pizza. How can you not love that for breakfast?!
Texture + flavor

The eggs stay soft underneath all those toppings, while the cheese melts right into the meat, onion, and olives. The tortilla underneath holds everything together and gets a little crisp around the edges in the air fryer, which I love.
If you use spicy salami or pepperoni, you get a little kick, while ham, cooked bacon, leftover chicken, or cooked sausage give it a completely different flavor. Then you have all that melted mozzarella on top… so satisfying.
Air fryer tortilla pizza ingredients

This recipe makes 1 generous serving.
- 1 large tortilla, wrap, or thin pita bread
- 3 large eggs
- 1/4 teaspoon salt
- 3 ounces (80 grams) spicy salami, pepperoni, ham, cooked bacon, leftover chicken, or cooked sausage
- 3.5 ounces (100 grams) fresh mozzarella, preferably buffalo mozzarella
- 1 small red onion
- Black olives, to taste
- 1.8 ounces (50 grams) shredded mozzarella, Edam, or cheddar cheese
You can change the toppings depending on what you like and what you already have in the fridge.
What you’ll need
- Air fryer
- Air fryer liner or parchment paper
- Knife
- Cutting board
- Fork
That is pretty much it.
Let me show you how I make this

Step 1: Cut up the meat
First, cut up whatever meat you feel like using. Salami and pepperoni both work really well if you want something with a bit more flavor, but ham, cooked bacon, leftover chicken, or cooked sausage are all great too.
Cut it into smaller pieces so you can spread it all over the eggs later and get a bit in every slice.
Step 2: Line the air fryer basket

Next, line the air fryer basket with parchment paper or an air fryer liner. It makes it super easy to lift the whole thing out later, and cleanup is super easy too.
Note: Make sure the liner fits inside the basket without covering the side vents because you still want the hot air to move around properly. Also, never run the air fryer with loose parchment paper sitting inside by itself. Put the tortilla on top before turning the air fryer on so the paper stays weighed down.
Step 3: Add the tortilla
Next, take a tortilla, wrap, or pita bread, whatever you have at home, and place it in the lined air fryer basket. Just make sure it fits comfortably inside your basket.
If the sides curl up a little, that actually works nicely here because they help keep the eggs and toppings from spilling out.
Step 4: Add the eggs

Next, crack 3 eggs onto the tortilla. I am using 3, but you can use 2 if your tortilla is smaller or add another one if you want it more eggy.
Sprinkle over the salt, then use a fork to break the yolks and gently mix the eggs across the tortilla. You can whisk them in a bowl first if you prefer, but I usually mix them right on the tortilla and save myself another bowl to wash.
Top Tip: Keep the eggs mostly inside the tortilla instead of spreading them over the edges. This helps keep everything together while it cooks and makes the finished tortilla pizza easier to lift out.
Step 5: Add the toppings
Next, add the meat you cut up earlier and spread it around so there is a bit of it all over. Tear the fresh mozzarella into smaller pieces and scatter that over the eggs too.
Then add a bit of chopped red onion, and I also like to add some olives and a good handful of shredded cheese. I usually use mozzarella, but Edam or cheddar work really well too, so just use whichever one you like.
Did You Know: Fresh mozzarella has more moisture than shredded mozzarella. Tearing it into smaller pieces and spreading it around helps stop one area from becoming too wet.
Step 6: Air fry

Air fry it at 356°F (180°C) for about 10 minutes, until the eggs are cooked, the cheese is melted, and the top is starting to turn a little golden brown. I would start checking around 8 minutes because air fryers can cook a little differently.
Take a look at the center before lifting it out. The egg should look set rather than wet or runny. If it still needs a little longer, give it another 1 to 2 minutes.
Then carefully lift it out using the liner, slice it up, and breakfast is ready!

Easy topping swaps

You definitely do not have to make this air fryer tortilla pizza for breakfast exactly the same way every time. For the meat, spicy salami is great if you want a stronger flavor, while ham or leftover chicken make it a little milder.
Cooked bacon and sausage both work really well too, and pepperoni gives it even more of that pizza-style feel. For the cheese, mozzarella gives you that lovely stretchy melted cheese, but cheddar or Edam are both really good options.
You can also leave out the olives if they are not your thing, or add a few sliced bell peppers or mushrooms. I would just go easy on really watery vegetables because they can release quite a bit of moisture while the eggs cook.
What tortilla works best?

A regular flour tortilla or soft wrap is probably the easiest option because it sits nicely inside most air fryer baskets. A thin pita can work too.
The main thing is making sure the base fits inside the basket and has enough room to hold the eggs without them spilling over the sides. If your tortilla is smaller, use fewer eggs. If it is larger and your air fryer basket has plenty of room, you can add another egg if you want it more filling.
How to store leftovers

This air fryer tortilla pizza is definitely best while the cheese is still hot and melty, so I usually eat it right away. If you do have leftovers, let them cool, place them in an airtight container, and keep them in the refrigerator for up to 3 days.
How to reheat it

The air fryer is my favorite way to reheat this because it helps the tortilla crisp up again. Place a slice in the air fryer at about 320°F (160°C) for around 3 to 5 minutes, just until it is hot through the middle.
Keep an eye on the top because the cheese can brown pretty quickly the second time around. You can microwave it too if you are in a hurry, but the tortilla will come out softer.
