I think the combination of almond flour and almond butter is what makes these cookies so good. The almond flour has this natural sweetness and gives the cookies a more interesting flavor than white flour.

And the almond butter works like regular butter would in a cookie recipe, but it adds more of that nutty almond flavor and keeps everything moist.

When you mix these with oats, you get cookies that have a great texture. They’re chewy in the middle but get those slightly crispy edges that good cookies should have.

I’ve tried a lot of gluten-free cookies before that were either super dry or had a weird sandy texture, but these actually feel like “real” cookies when you bite into them.

  • 1¾ cups almond flour (or 1⅓ cups almonds to grind)
  • 1 cup oat flour (or 1 cup of gluten-free rolled oats to grind)
  • 6 tablespoons almond butter
  • 6 tablespoons maple syrup
  • 6 tablespoons oat milk or almond milk
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • ⅓ cup chocolate chips

To make this recipe easier, you can use store-bought almond flour instead of grinding your own. Unblanched almond meal, like the one below, works great for this cookie recipe as it adds more nutty flavor to these oatmeal cookies.

Top Tip: If you don’t have almond butter, you can use any other nut butter you have on hand. Peanut butter works great and gives a different but equally delicious flavor. Cashew butter makes them a bit sweeter and milder, while hazelnut butter pairs amazingly with the chocolate chips for an almost Nutella-like taste.

Step-By-Step Cookie Instructions

Let me walk you through how to make these cookies from start to finish.

Preparing The Ingredients

Before you start mixing, you’ll need to prepare your oven and ingredients.

Step 1: Preheat your oven to 350°F and line a baking sheet with parchment paper.

Step 2: If using whole almonds and oats, grind them in a food processor for about 2 minutes until you get a flour-like texture. Don’t worry if there are still some small pieces visible.

Note: If you bought almond and oat flour already, skip this step.

Making The Cookie Dough

Now comes the part where we mix everything together into a perfect cookie dough.

Step 3: Mix your almond flour and oat flour together in a bowl.

Step 4: Add the almond butter, maple syrup, milk, vanilla extract, and salt.

Step 5: Stir until everything comes together into a thick cookie dough.

Top Tip: Check your dough consistency. It should be thick enough to roll into balls but still a bit sticky. If it’s too dry, add more milk one tablespoon at a time. If it’s too wet, let it sit for 5 minutes so the oats can absorb some liquid.

Adding Chocolate And Shaping

This is where the cookies start taking shape and get that delicious chocolate flavor.

Step 6: Fold in the chocolate chips.

Step 7: Take about 1½ tablespoons of dough for each cookie. Roll it into a ball and place it on the baking sheet, leaving space between cookies.

Step 8: Gently flatten each ball with your palm. These cookies don’t spread much during baking.

Baking The Cookies

Proper baking is crucial for getting that perfect chewy texture we’re after.

Step 9: Bake for 15 minutes until the edges are golden brown but the centers still look soft.

Important Note: Do not overbake! They will not look completely done in the middle when it’s time to take them out. They continue to firm up as they cool.

Step 10: Let the cookies cool on the baking sheet for 5 minutes before moving them.

Storage Instructions

These cookies keep really well, and knowing how to store them properly will keep them tasting fresh.

Store in an airtight container at room temperature for up to 5 days. They actually get chewier on the second day.

For longer storage, freeze in a container with parchment paper between layers for up to 3 months.

Top Tip: Freeze unbaked dough balls and bake them straight from frozen whenever you want fresh cookies. Just add 2-3 minutes to the baking time.

  • 1 1/3 cups (200g) almonds or almond flour

  • 1 cup (100g) gluten-free rolled oats

  • 6 tablespoons (96g) almond butter

  • 6 tablespoons (90ml) maple syrup

  • 6 tablespoons (90ml) oat milk or almond milk

  • 1 teaspoon (5ml) vanilla extract

  • Pinch of salt

  • 1/3 cup (55g) chocolate chips

Directions

  • Preheat the oven to 350°F (175°C). Prepare a baking sheet with parchment paper.
  • Blend the almonds and rolled oats in a blender or food processor for about two minutes until a fine flour mixture forms.
  • Add almond butter, maple syrup, milk, vanilla extract, and salt into the flour mixture. Blend until well combined and the dough is thick but stirrable.
  • If the dough is too hard, add more milk, one tablespoon at a time, until normal cookie dough consistency. Stir in chocolate chips.
  • Scoop about one and a half to two tablespoons of dough, roll into balls, and place on the baking sheet.
  • Flatten cookies slightly with your hands as they don’t spread during baking. Bake for about 15 minutes until edges are golden.
  • Remove cookies when the edges are golden but the middle is soft. Let them cool on the baking sheet to firm up.
