Step 1: Prepare the Fruit

Add black raisins and dried orange peels to your mixing bowl. Then, add 1/4 cup of all-purpose flour. Mix everything together until all the fruit pieces are covered with the flour.

Top Tip: If your dried fruit is a little too firm, soak it in warm water for 10 minutes before flouring. This keeps it extra juicy in the loaf!

Step 2: Add Wet Ingredients

Pour oil into the bread pan, followed by ⅔ cup of evaporated milk. In a separate bowl, whisk 2 eggs along with 1 extra egg yolk, then add the mixture to the bread pan.

Step 3: Add Dry Ingredients

Add brown sugar, flour, baking powder, soda bicarbonate, and salt.

Step 4: Start the Bread Maker

Lock the bread pan into place, select the sweet bread setting, and press start. Slowly pour in ½ cup of lukewarm water as the machine begins mixing.

Top Tip: Adding the water slowly helps everything combine smoothly and prevents any dry pockets in the batter.

Step 5: Add the Fruit

Once the ingredients start combining, gradually add the flour-coated fruit.

Step 6: Bake and Cool

Let the bread maker work its magic! Once done, let the cake cool completely in the pan before removing it. This keeps it from crumbling apart.

Note: This simple fruit cake recipe is very delicate when warm. Be patient and let it cool fully before slicing to get the best texture.

Common Mistakes to Avoid When Making Bread Maker Fruit Cake

To ensure your quick easy moist fruit cake recipe turns out perfectly, watch out for these mistakes:

  • Adding too much liquid – This can make the batter too thin and affect the texture as all the fruit will settle at the bottom of the bread pan.
  • Not coating the dried fruit in flour – This step prevents them from sinking to the bottom of the loaf.
  • Skipping the cooling step – The loaf is very delicate when warm and can crumble if removed too soon.
