I love this cracker recipe because there really isn’t much to it. You make one simple dough, let it rest, roll it out, cut it up, and bake.

There is no special cracker-making equipment needed either. A rolling pin, baking sheet, and fork will get the job done.

And because you are making them yourself, you can decide exactly how big, small, thick, or crispy you want them. How can you not love that?!

These crackers have a really nice crunch without being rock hard. They are already crispy when they come out of the oven, then they get even crispier as they sit for a few minutes.

The green onion gives them a savory onion flavor without being too strong, while the sesame seeds add a slightly nutty taste.

They are salty, crunchy, and super delicious on their own. Honestly, I’m obsessed with how simple they are.

You only need a few basic ingredients for this easy cracker recipe:

  • 1¼ cups (150 g) all-purpose flour
  • ¼ cup (60 g) milk
  • 2 tablespoons (30 g) unsalted butter, melted
  • ⅓ teaspoon (2 g) salt
  • ⅔ teaspoon (2 g) instant yeast
  • ¼ teaspoon (1 g) baking soda
  • ⅓ cup (35 g) chopped green onion
  • 1 tablespoon (10 g) sesame seeds

The sesame seeds add a really nice flavor, but the green onion is definitely the star here.

Equipment You’ll Need

Nothing fancy here:

  • Mixing bowl
  • Spatula
  • Rolling pin
  • Parchment paper
  • Baking sheet
  • Knife, pizza cutter, or crinkle cutter
  • Fork

Cookie cutters also work if you want to make fun little shapes. I usually keep mine simple and cut them into squares or rectangles.

How to Make Crackers at Home

Step 1: Mix the Wet Ingredients

To make these crispy crackers, add ¼ cup or 60 grams of milk to a mixing bowl. Then add 2 tablespoons or 30 grams of melted unsalted butter, followed by ⅓ teaspoon or 2 grams of salt.

Give it a good stir so the milk, butter, and salt are mixed together.

Step 2: Make the Dough

Next, add 1¼ cups or 150 grams of all-purpose flour, ⅔ teaspoon or 2 grams of instant yeast, and ¼ teaspoon or 1 gram of baking soda.

Then add ⅓ cup or 35 grams of chopped green onion and 1 tablespoon or 10 grams of sesame seeds.

Start mixing with a spatula, then use your hands once the dough starts coming together. Give it a quick knead until you have a nice, smooth ball of dough.

Top Tip: Don’t keep kneading once the dough has come together. This is a cracker dough, so a short knead is plenty.

Step 3: Let the Dough Rest

Next, cover the bowl with plastic wrap and leave the dough to rest for 30 minutes.

After resting, the dough should feel a little softer and easier to roll.

Note: This is only a short rest. You are not waiting for the dough to double in size like bread dough.

Step 4: Roll It Out

Now, place the dough between two sheets of parchment paper and press it down a little with your hands to get it started.

Then use a rolling pin to roll the dough out into a rough rectangle, making it as even as you can.

If you like your crackers extra crispy, roll the dough a little thinner. If you prefer a slightly thicker cracker with more bite, leave it a bit thicker.

Top Tip: Try to keep the dough fairly even from the middle to the edges. Very thin edges can brown before the crackers in the center are ready.

Step 5: Cut the Crackers

Next, you can use cookie cutters to make different cracker shapes, but I like to keep it easy and just cut the dough into small squares or rectangles.

A crinkle cutter works really well here and makes the crackers look sooo cute without making the recipe any harder.

You can also use a pizza cutter or regular knife.

Step 6: Poke Them With a Fork

Place the cut crackers on a baking sheet lined with parchment paper.

Then poke each cracker a few times with a fork.

Those little holes help stop the crackers from puffing up too much while they bake, and they give them that classic cracker look too.

Step 7: Bake Until Crispy

Bake the crackers in a preheated oven at 338°F (170°C) for about 15 minutes.

Start checking them around 12 minutes, especially if you rolled your dough quite thin. You want the crackers to look lightly golden, especially around the edges.

They should already feel fairly crisp when they come out.

Top Tip: If some crackers are much smaller or thinner than the others, keep an eye on those first. They may be ready a minute or two earlier.

Step 8: Let Them Crisp Up

These crackers are already quite crispy straight out of the oven, but they crisp up even more as they cool.

Give them a few minutes to cool down a little, then they’re ready to eat.

And yes… eating one while it is still slightly warm is absolutely allowed!

How to Get Really Crispy Crackers

The biggest thing is how you roll the dough.

If the dough is very thick, you will end up with a chunkier cracker that may stay a little softer in the middle. If you roll it thinner, more moisture can escape while it bakes, which gives you a crispier result.

You also want the crackers to be fairly similar in size. Tiny pieces can brown quickly while larger ones are still baking.

And don’t pull them out when they still look pale and soft. A little light golden color around the edges is a good sign that they are getting properly crisp.

They are also really good with:

  • Cream cheese
  • Hummus
  • Guacamole
  • Cheese
  • Soup
  • Simple dips
  • A snack board with cheese and vegetables

Because they already have plenty of green onion flavor, they don’t really need much added to them.

How to Store These Homemade Crackers

Once the crackers have cooled down, store them in an airtight container at room temperature.

For the best crunch, I would eat them within about 3 to 5 days.

Make sure they are not still warm when you close the container. Warm crackers can release a little steam, and trapped moisture can make them soften.

What If My Crackers Go Soft?

If they lose some of their crunch, place them back on a baking sheet and warm them in a 300°F (150°C) oven for around 3 to 5 minutes.

Keep a close eye on them because they can go from crisp to too brown pretty quickly.

Let them cool for a few minutes afterward, and they should crisp up again.
