Why you’ll love this single-serve brownie recipe

This is quick, simple, and honestly kind of adorable.
You melt chocolate and butter, stir in a few basics, then air fry a small cup until the top is set and the middle is still soft. That is the whole vibe.
Top Tip: Use a darker semisweet chocolate, around 60% cocoa, if you can. It gives you a richer chocolate flavor and keeps the center extra gooey.
Texture + flavor

This air fryer brownie recipe tastes super rich and chocolatey, with a set top and an almost molten middle while it is still warm. The center stays gooey and melty, which makes this a true gooey brownie recipe.

Let it sit for a few minutes, and it thickens up slightly… still gooey, just a little more fudgy.
Did You Know: Brownies keep baking a little from residual heat after you pull them out, which is why taking them out when the center is still soft gets you that gooey middle.
Ingredients for this air fryer brownie recipe
- 1/2 cup of semisweet chocolate chips or 90-gram semisweet chocolate bar
- 3 tablespoons of butter (42 grams)
- 1 large egg
- 2 tablespoons of sugar
- 1 tablespoon of self-rising flour
Equipment you’ll need
- A microwave-safe bowl
- A fork or small whisk
- A spoon or spatula
- A small heat-proof cup or ramekin that fits in your air fryer
- An air fryer
Instructions for this air fryer brownie recipe for one

Step 1: Chop 90 grams of a semisweet chocolate bar into small pieces, or measure 1/2 cup of semisweet chocolate chips. Smaller pieces melt faster and more evenly… and you will not be fighting stubborn lumps later.
Step 2: Put all the chocolate pieces into a microwave-safe bowl. Add 3 tablespoons of butter (42 grams). Microwave for about 1 minute total, stopping to stir every 20 seconds, until it looks smooth and glossy when you stir.

Step 3: In a separate bowl, crack 1 large egg. Add 2 tablespoons of sugar and mix until it looks evenly combined and a little lighter, about 15 to 20 seconds.
Step 4: Add 1 tablespoon of self-rising flour and stir just until the flour disappears. At this point, it will look loose, not thick yet… that is normal.

Top Tip: When you add flour, mix only until you stop seeing dry streaks. Overmixing can make the brownie less tender.
Step 5: Add all the melted chocolate mixture to the egg mixture and stir until fully mixed in. The batter should turn a deep chocolate brown and look smooth and shiny.
Step 6: Spoon batter into a small heat-proof cup, but do not fill it all the way. Leave a little space at the top so it has room to rise.

Step 7: Preheat the air fryer, then air fry at 190°C (374°F) for about 5 to 6 minutes, until the top looks set and you can smell that rich chocolate brownie smell. The center should still be soft underneath that set top. Start checking at 5 minutes since every air fryer runs a little differently.
Make one cup now, save the rest
This batter makes about 12 tablespoons total, which is 4 brownie cups if you use about 3 tablespoons per cup.

If you only want one brownie cup right now, cook one cup and cover the remaining batter. Store it in the fridge and use it within 1 to 2 days. Keeping batter cold can slow the rise a bit, so the next cup may need an extra minute.

Reheating tips
If your brownie cup cools down and you want it warm again, pop it back in the air fryer for about 1 minute. Keep an eye on it. You want warm and gooey, not dried out.

Common issues and easy fixes

- Top looks set, but the middle feels too loose: Give it 1 more minute, then let it sit for 3 to 5 minutes. It thickens as it cools.
- Brownie looks dry: It probably cooked a little too long. Next time, start checking at 5 minutes and pull it when the top is set, even if the center still feels soft.
- Chocolate seized or turned grainy: The microwave may have been too hot for too long. Short 20-second bursts and stirring help a lot.
