  • 1/4 tsp (0.5 grams) cardamom powder

  • A few strands of saffron (optional)

  • A few ice cubes

Directions

  • Prepare the Mangoes: Peel and cube 2 cups (300 grams) of ripe mangoes. Choose mangoes that are fragrant, slightly soft to the touch, and have a deep golden color.

Use a knife or potato peeler for easy peeling, then slice off the mango cheeks and cut the remaining flesh around the pit into small cubes. Place the mango cubes into a blender.two mangoes in a bowl with water

Notes

  • Choosing Mangoes: For the best flavor, use Alphonso, Ataulfo, or Kent mangoes. These varieties are sweet, less fibrous, and have a rich flavor ideal for lassi.
  • Adjusting Sweetness: Depending on the sweetness of the mangoes, you can adjust the amount of sugar. Taste the mango puree before adding sugar to ensure the right balance.
  • Yogurt Options: Full-fat yogurt will give the lassi a creamier texture, but Greek yogurt can be used for a thicker consistency. If you’re watching calories, low-fat yogurt works well too.
  • Chilling the Ingredients: For an extra refreshing drink, chill the mangoes and yogurt in the fridge before blending. This reduces the need for additional ice, which can dilute the flavor.
  • Garnishing: Garnish with a sprinkle of ground pistachios, saffron strands, or a drizzle of honey for added texture and flavor.
  • Blender Tips: To ensure a smooth consistency, start blending on low speed to break down the mango pieces, then increase to high speed for a silky finish.
