Chicken Nuggets Recipe Ingredients

  • 1 cooked chicken breast, finely chopped, about 1 1/2 cups (210 g)
  • 1/2 cup shredded mozzarella cheese (50 to 60 g)
  • 1 large egg

Optional add-ins

  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Pinch of black pepper

Leftover chicken, you can use

  • 1 1/2 cups cooked turkey, finely chopped (210 g)
  • 1 1/2 cups leftover rotisserie chicken, finely chopped (210 g)
  • 1 can chicken, well drained, about 12.5 ounces (354 g)

Let me show you how I make these chicken nuggets

Step 1: Preheat the air fryer or oven.
Preheat your air fryer to 400°F (200°C). If you are baking the nuggets instead, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Note: A fully preheated air fryer or oven helps the nuggets start crisping right away, which is especially helpful since this recipe does not use breadcrumbs.

Step 2: Chop the chicken very finely.
Take your cooked chicken and slice it into thin strips first, then chop it into very small pieces. You want the chicken finely chopped, not left in big chunks, so the mixture holds together well and gives you that classic nugget shape and texture.

Top Tip: This step matters more than it seems. If the chicken pieces are too big, the mixture will not press together as easily, and the nuggets are much more likely to crack or fall apart while cooking.

Step 3: Mix the nugget mixture.
Add the chopped chicken to a medium bowl. Add the shredded cheese and the egg, then mix everything together really well with a fork until it looks evenly combined.

At first, it might look a little messy and uneven, but keep going. You want the egg fully worked through the chicken and cheese so the mixture holds when you press it together in your hands.

Step 4: Shape the nuggets.
Take small portions of the mixture and press them into nugget shapes with your hands. I usually get about 9 to 10 medium nuggets from one batch, depending on the size.

You can make them more oval, rounded, or a little like fast-food-style nuggets if that is the shape your family already loves. They look sooo cute lined up and ready to cook…

Top Tip: If the mixture sticks to your hands, lightly dampen your fingertips with water. That makes shaping much easier without changing the mixture itself.

Step 5: Cook until crisp and golden.
Place the nuggets in the air fryer basket in a single layer, with a little space between them. Air fry for 10 minutes, then flip each nugget and air fry for another 8 to 10 minutes, until they look golden around the edges and feel firmer on top.

If you are baking them, place them on the prepared baking sheet and bake for 18 to 22 minutes, flipping halfway through. Start checking at 18 minutes. They should look lightly golden and feel set on the outside, not wet or soft.

Note: Exact cooking time can vary depending on how moist your chicken is, how thick you shape the nuggets, and how hot your air fryer or oven runs. If your nuggets still look pale at the end, give them another 1 to 2 minutes. Since the chicken is already cooked, what you are really looking for here is a firmer texture and a golden finish.

Step 6: Let them rest briefly.
Let the nuggets sit for 2 to 3 minutes before serving. This gives them a chance to firm up a bit more, which improves the texture.

Serve warm with ketchup, ranch, BBQ sauce, honey mustard, or whatever dip you love most.

  • 1 handful (50 to 60 g) shredded cheese

  • 1 whole egg

  • Chop the cooked chicken breast into small pieces.
  • Grate a handful of cheese and add to the chicken.
  • Crack an egg into the bowl with the chicken and cheese.
  • Mix thoroughly until ingredients are combined.
  • Shape the mixture into nugget shapes using your hands.

Mozzarella is my favorite cheese for this recipe because it melts nicely and keeps the flavor mild. That makes these really family-friendly, especially for kids who like simple flavors.

If you want more savory depth, mix in a little Parmesan. If you want a stronger cheesy bite, cheddar works too. In my opinion, the best balance is mostly mozzarella with a spoonful of Parmesan. It is simple, flavorful, and still gives the nuggets that soft, tender middle.

This recipe is flexible, but I still like keeping the swaps realistic and useful.

  • Use cooked turkey instead of chicken
  • Use canned chicken, but drain it very well first

Top Tip: Skip the microwave if you want them to stay crispy. It will warm them up, but the outside will soften quite a bit.

Can you freeze them?

Yes, you can. Let the cooked nuggets cool completely, then place them on a tray or plate in a single layer and freeze until solid. Once frozen, transfer them to a freezer-safe container or bag.
