- 1/3 cup milk (80 milliliters)
Cake Batter
- 3 eggs
- Pinch of salt
- 1 teaspoon vanilla extract (5 milliliters)
- 3/4 cup sugar (150 grams)
- 1/3 cup plus 1 tablespoon light olive oil (90 milliliters)
- 2/3 cup yogurt (130 grams)
- 2 cups all-purpose flour (250 grams)
- 2 tablespoons baking powder (15 grams)
Crumble Topping
- 3 tablespoons flour (25 grams)
- 3 tablespoons sugar (38 grams)
- 2 tablespoons butter (28 grams)

Preparing the Apples
We start by cooking the apples. This softens them slightly and brings out their sweetness.

Add 1/3 cup brown sugar, 1 teaspoon cinnamon, 1 teaspoon vanilla extract, and 1/3 cup milk. Stir gently to mix everything.

Let the apples cook for about 8 to 10 minutes, stirring occasionally, until they are tender but still hold their shape. You want them soft without turning to mush.

Making the Cake Batter
This part comes together quickly, and it is straightforward.

In a large mixing bowl, crack in 3 eggs and add a pinch of salt. Add 1 teaspoon vanilla extract and 3/4 cup sugar. Use an electric mixer or a whisk to beat everything until combined.

Add 1/3 cup plus 1 tablespoon light olive oil (90 milliliters) and 2/3 cup yogurt (130 grams). Mix until smooth.
Step 6
Sift 2 cups of flour (250 grams) and 2 tablespoons of baking powder (15 grams) into the wet mixture. Stir gently just until the flour disappears. Do not overmix, or the cake can become dense.

Preparing the Crumble Topping

In a small bowl, mix 3 tablespoons flour (25 grams), 3 tablespoons sugar (38 grams), 2 tablespoons butter (28 grams), and 1/2 teaspoon cinnamon (1 gram). Use your fingers or a fork to mix until it forms small clumps.
Optional Cinnamon Cocoa Layer
If you want a subtle layer in the middle for extra flavor, this is quick to make.

Step 8
Mix 2 tablespoons sugar (25 grams), 1 teaspoon cinnamon (2.5 grams), and 1 tablespoon cocoa powder (5 grams) in a small bowl. Sprinkle it over the bottom layer of cake batter before adding the rest of the batter.
Assembling the Cake
Now everything comes together.

Pour half of the cake batter into the greased baking pan and spread it evenly. Sprinkle the cinnamon cocoa mix if you are using it. Pour the remaining batter over the top.

Spread the cooked apples evenly over the top of the batter. Then sprinkle the crumble mixture on top of the apples.
Top Tip: You do not need to press the crumble. Just scatter it gently so it bakes nicely on top.
Baking the Cake

Bake the cake in a preheated oven at 180 degrees Celsius or 350 degrees Fahrenheit for about 40 to 50 minutes. The cake is ready when the top is golden and the crumble looks crumbly, and your kitchen smells amazing.

Take the cake out of the oven and let it cool in the pan for about 15 minutes before slicing. This helps it hold together and makes serving easier.
