Why I love making sliced potatoes in an air fryer

These are the kind of potatoes I make when I want something simple, cozy, and actually exciting to eat. You only need a couple of potatoes, one egg, some herbs, Parmesan, and your air fryer.
They feel a little bit like a quick potato bake, but without turning on the oven or waiting forever. The sliced potatoes cook together in the basket, the top gets a little golden, and the Parmesan adds those salty little crispy bits that make the whole thing so good.
Let’s be honest… potatoes are already pretty perfect. But when they are thinly sliced, seasoned, mixed with egg and cheese, and cooked in the air fryer, how can you not love them?!
Texture + flavor

These air fryer sliced potatoes turn out crispy around the edges, soft in the middle, and cheesy in all the best little spots.
The flavor is herby, savory, and simple in the best way. You get the Italian herbs, a little fresh parsley, a small amount of rosemary, and Parmesan running through the potato slices. It is not too heavy, but it still feels like proper comfort food.
Did You Know: Thin potato slices cook faster than thick chunks, which is why this recipe works so well at a lower air fryer temperature.
Air fryer sliced potatoes ingredients

This recipe makes one generous serving, which is how I usually make it for myself. If you want to serve it as a side dish, it can also work for two smaller portions.
- 2 medium potatoes, thinly sliced, about 14 ounces (400 grams)
- 1 large egg
- 1 teaspoon Italian herbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh rosemary
- 1/4 cup grated Parmesan cheese, about 25 grams
- 1 teaspoon butter, for coating the air fryer basket
- 1 tablespoon light olive oil, for drizzling halfway through
Optional extras
- 1 extra egg, if you want it more filling
- 2 extra eggs, if you want more protein and a softer potato bake-style texture
- Melted butter, or ghee, instead of light olive oil
- Avocado oil, instead of light olive oil
- Dried parsley, instead of fresh parsley
Note: If you add more than one egg, the potatoes will be softer, and you may lose some of the crispiness. It will still taste good, but it will be more like a soft potato bake than crispy sliced potatoes in the air fryer.
Equipment
- Air fryer
- V-blade slicer or sharp knife
- Mixing bowl
- Small bowl
- Fork
- Grater, if grating Parmesan fresh
- Air fryer liner or aluminum foil, optional if using extra egg
How to make sliced potatoes in an air fryer

Step 1: Slice the potatoes
When I make this recipe just for myself, I usually use 2 medium-sized potatoes. Slice the potatoes nice and thin, just like you see me doing in the video here.

I really like using my new V-blade slicer whenever I get the chance, because I just find it so satisfying to slice potatoes with it. It makes the slices come out nice and even too, but if you do not have one, a sharp knife will still do the job.
Top Tip: Try to keep the potato slices close to the same thickness. This helps them cook more evenly, so you do not end up with some slices too soft and others too dark.
Step 2: Wash the potato slices
Once the potatoes are sliced, give them a good wash with water. I like to do this after slicing because it helps rinse off some of that extra starch on the potato slices.
The slices feel less sticky after that, and it also makes them easier to handle before we start mixing everything together.
Step 3: Season the potatoes
Now, add one teaspoon of Italian herbs, half a teaspoon of salt, and a quarter teaspoon of black pepper to the sliced potatoes in the bowl.

But you can really add any seasoning you like at this point, so make it your own and use what you enjoy. Use your hands to give the potatoes a quick mix, just enough to spread the seasoning over the slices so they all get a little flavor.
Step 4: Beat the egg
Next, in a separate bowl, crack one egg and beat it with a fork a little, just until it comes together.
If you want a bit more protein, you can add one more egg, or even two more, depending on how filling you want this to be. Just keep in mind, the more eggs you add, the softer the potatoes may turn out, so you might lose a little bit of that crispiness.
Note: If you use more than one egg in this recipe, use an air fryer liner or some aluminum foil at the bottom of your air fryer basket, because the extra egg will drip through.
Step 5: Add parsley and rosemary
Now, pour the egg mixture over the potatoes. Then slice up a bit of fresh parsley and add it in.
I like adding the parsley here because it gives the potatoes a little fresh flavor, but dried parsley will also work great.

Also, what I really like to add is a little fresh rosemary. You do not need much, because rosemary has a pretty strong flavor, but even a small amount makes the potatoes taste so good. Just chop it up nice and small, then add it in with the parsley.
Step 6: Add Parmesan
And next, my favorite ingredient. Grate some Parmesan cheese, or use already grated Parmesan if that is what you have.
I usually use about a quarter cup, but you can add a little more if you want it extra cheesy. Add it into the bowl with everything else, because this is what gives the potato slices those salty, golden little bits later.
Step 7: Mix everything together
And we are almost there now. Just give everything one last quick mix, so the potato slices are nicely coated all the way through.
Quick tip: if you use more than one egg in this recipe, use an air fryer liner or some aluminum foil at the bottom of your air fryer basket, because the extra egg will drip through.
Step 8: Add to the air fryer
I usually coat the air fryer basket with a little butter first, so the potatoes do not stick.

You can technically just dump the potatoes into the basket, but they will not cook as evenly, and some of the slices can burn before the rest are done. So I like to lay the potato slices in there more evenly, with a little bit of overlap, almost like a simple potato layer.
Top Tip: Do not pile the slices into one thick mound. A thinner, more even layer gives you better browning on top and more even cooking underneath.
Step 9: Air fry the potatoes
Air fry the potatoes at 320°F, or 160°C, for about 22 to 25 minutes, until the potato slices have had enough time to soften underneath and start getting a nice color on top.
In my Ninja air fryer, 24 minutes is usually just right for this amount, but every air fryer cooks a little differently, so yours may need a minute or two more or less.

About halfway through, I like to drizzle a little light olive oil over the top, because it helps the upper layer crisp up better and gives the potatoes that nicer golden finish. You can also use a little melted butter or avocado oil if you prefer, but I would not add too much, because you still want the top to crisp up without making the potatoes feel heavy or oily.
Then, pop it back in the air fryer for another 10 minutes or so, until the top has a nice bit of color and the edges start to crisp up. By the end, the potato slices should be tender and easy to cut through.
Top Tip: Start checking near 22 minutes. If the top looks pale, give it a few more minutes. If the edges are getting too dark but the middle still needs time, lower the temperature slightly and cook a little longer.
How long to air fry potato slices

For this recipe, I cook the potato slices at 320°F, or 160°C, for about 22 to 25 minutes.
That lower temperature gives the potato slices time to soften before the top gets too dark. If you cook them too hot right away, the top can brown before the middle is properly tender.
If your slices are very thin, start checking at 20 minutes. If they are a little thicker, they may need closer to 25 minutes.

Helpful tips for the best air fryer potato slices

- Slice the potatoes evenly so they cook at the same speed.
- Wash the sliced potatoes to remove some of the extra starch.
- Use a little butter in the basket so the potatoes do not stick.
- Lay the potatoes in a fairly even layer instead of dumping them in.
- Drizzle oil halfway through, not right at the beginning, so the top gets a better finish.
- Use rosemary lightly because it has a strong flavor.
- Add extra egg only if you want a softer, more filling result.
Easy swaps
You can keep these air fryer sliced potatoes really simple, or you can change the flavor a little depending on what you have.
For the herbs, Italian herbs work nicely, but garlic powder, onion powder, paprika, or dried oregano would also be good. I would not add too many different seasonings at once, though. Potatoes are best when the flavors are simple.

For the cheese, Parmesan is my favorite because it gets salty and golden, but a little cheddar could work too. It will melt more than Parmesan, so the texture will be different, but still super delicious.
For the oil, light olive oil is what I like here. Avocado oil is a good option too. Melted butter gives a richer flavor, but it can brown faster, so use just a little.
Storage
These are best eaten fresh, right after they come out of the air fryer. That is when the top has the best texture.
If you have leftovers, let them cool, then store them in an airtight container in the fridge for up to 3 days.
They will soften as they sit, which is normal. Still tasty, just not quite as crispy as when they are fresh.
Reheating air fryer sliced potatoes
The air fryer is the best way to reheat these. Put the leftovers back in the basket and air fry at 350°F, or 175°C, for about 4 to 6 minutes, until warmed through.

If the top looks a little dry, you can add a tiny drizzle of oil before reheating. Tiny is the keyword here… you do not want oily potatoes.
I would avoid the microwave if you care about texture. It will warm them, but the potato slices will turn much softer.
What to serve with them
These air fryer sliced potatoes are great on their own, especially if you are making them as a quick lunch or snack.
They are also really good as a side with chicken, steak, fish, or a simple salad. I love them with something fresh on the side because the potatoes are warm, cheesy, and cozy.
You can also add a little sour cream, Greek yogurt, ketchup, or garlic mayo on the side. Not necessary, but very nice.
Common questions

1. Can I use raw potatoes in the air fryer?
Yes, this recipe uses raw sliced potatoes. The trick is slicing them thinly and cooking them at 320°F, or 160°C, so they have enough time to soften before the top gets too dark.
2. Can I make this without egg?
You can, but it will be a different recipe. The egg helps the potato slices hold together a little and gives the dish more of a potato bake feeling.
Without egg, the slices will be looser and more like seasoned air fryer potato slices. Still good, just not the same texture.
2. Can I use more cheese?
Yes… and I completely understand why you would want to! A little more Parmesan is fine, but if you add too much, it can make the top very salty.
Can I double the recipe?
You can double it, but it depends on the size of your air fryer basket. If the potato layer gets too thick, the middle will take longer to cook, and the top may brown too quickly.
For the best result, cook it in two batches or use a larger air fryer basket.
